Asparagus and melon salad recipe



MARINATED PORK TENDERLOIN
1 bundle of fresh asparagus
6-8 slices presciutto
1 cantelope
1 ball of fresh mozzarella cheese
2 lemons
3 TBS of oilive oil
salt and pepper
 
Broil asparagus for 6 - 8 minutes with salt and evoo.
Cut up melon and cheese into small squares.  Arrange melon and cheese over the asparagus on a pretty platter.   Crisp about 6 - 8 slices of prosciutto on parchment paper in the overn at 450 degrees for about 10 minutes.  Let it cool and then crumble.
Juice 1 large or 2 small lemons.  Add a couple of Tablespoons of Olive oil and salt and pepper and stir it will.  Pour this over the melon and cheese and crumble the prosciutto on top of it all.  Yum!!!

1 CUP VEG. OIL
3/4 CUP SOY SAUCE
1/4 CUP Worcestershire Sauce
2 Tbs. Dry mustard
1 tsp salt
1 Tbs. Pepper
½ c. red wine vinegar
2 Tbs. Chopped parsley
2 cloves minced garlic
1/3 cup fresh lemon juice (really do NOT use bottled)

Mix all ingredients and put 2-3 lbs. of pork tenderloin in marinade.  Marinate 4-5 hours or overnight.  Grill each tenderloin whole about 15 minutes on each side.  Let rest a few minutes then slice and enjoy!!!

 Fresh Raspberry Frozen Greek Gogurt

Today I made fresh raspberry frozen greek yogurt.  It is soooo simple.! Take a small carton (maybe 1/4 pint) of fresh raspberries and put them in the food processor with about 3/4 cup sugar.  You can use splenda if you would rather but I don't have that measurement. Whirl those together until pureed.  Then put about 3 cups of non-fat greek yogurt. ( You won't believe how creamy something non-fat can be!) Put this in with the raspberry mixture and whirl it all together (love that word whirl!) . Taste to see if it is sweet enough for you.  There is always a little tanginess with greek yogurt.  Then put it all in the Cuisinart ice cream maker and turn it on!  In about 10 minutes you will have a luscious treat!!! Enjoy!!

Mom's Required Lemon  Cake

1 lemon cake mix ( I like Duncan Hines)
Make as directed but add the juice of 2 lemons and reduce the liquid by that much.

Frosting:
In food processor or with a mixer:
zest and juice of one lemon
1/2 stick butter
6 oz cream cheese
1 pound powdered sugar
1/2 teaspoon vanilla

Beat together until smooth and slather on completely cooled cake or cupcakes.  Enjoy!!

Molasses popcorn ball recipe, Enjoy!
1 cup sugar, 1/3 cup molasses, 1/3 cup water, 1/4 cup butter, 3/4 teaspoon salt.
Boil all these together til soft crackle ball stage. Take pan off heat and add 3/4 teaspoon vanilla. Pour over 3 quarts popped corn in a large bowl. While it cools a little, butter your hands. Carefully grab handful and squeeze to make balls. and put on waxed paper.  Sometimes it does not hang together too well so if not just enjoy caramel corn!!
